I have both on my laptop. Can I ditch the 2020 version? Also, is there somewhere in my settings that determines what version a photo opens in? Sometimes a photo will open in 2020. It seems to happen when I open a photo from my pictures library not LR. Help please & thank you

Yes, just delete 2020 through the Adobe CC Desktop which should have already pointed file types to PS 2021.
