I currently am working off of Sonoma 14.4.1 and LR Classic 14. 0.1

Are people still having issues with updating to Sequoia? If so is it safe to just update LR Classic? Or is it safe to update both?

I have never had any issues with Sequoia. I did not update to MacOS until v15.1 was out. But I have been on the latest of each ever since. Currently I am on LrC v14.2 and Sequoia v15.3

You don't mention whether you have an older intel Mac or a silicon Mac. I think Silicon Macs are better tuned for the current OS es

I have the Mac Studio M1 Max 2022. I know they've come out with more powerful versions, but I hope this one will work well for all the the updates.

You should be fine as long as you have at least 24 gb of internal memory
