Any lightroom tips for fixing white skies, or is this best done in an external editor?

The adjustment brush won't paint blue colour on a white sky.

The adjustment brush will add color if you also decrease the exposure on the brush. Also, try the recovery slider if the sky is not completely blown out.

Try a graduated filter if the sky is not completely blown

it as an 'adjustment' brush not an 'add' brush so it can only work with what is there. If the sky is completely blown then there is nothing to work with, same goes for the grad filter. It is possible to tint the sky in LR with a blue colour but it won't look that great there isn't any colour to start with. If they don't work then you will have to add the sky using Photoshop.
