Hi,
I think I know the answer to this but just want to check.
I am going to use LR CC for my 2020 photos onward. So will create a catalogue and storage area in the cloud. That is the easy part.

However, I have several other sets of folders and catalogues on my desktop machine for which I see little reason to transfer to the cloud. My understanding is that as long as I don’t sync them to the cloud I could still access them from the desktop version if and when I require.

Lightroom CC syncs everything to the cloud. You cannot selectively sync images and not sync other images in certain folders (and still access them in Lightroom). The only way to not sync certain folders would be to use Lightroom Classic on those, but that means you’ll need the Photography Plan with 1TB cloud space at $20 per month.

A cheaper option is to take the Lightroom Plan, which means your Lightroom Classic version will expire. You will still be able to use the old catalogs with Lightroom Classic and export photos, however. Only the develop and map modules will cease to work.

Johan is correct. A small and perhaps obvious point, sync will no longer work from Classic if your subscription to it expires.
