When adding / updating IPTC metadata and the fields start to populate after you begin typing. If there are similar entries, such as one has a capital and the other does not, how do I get rid of the entry I don't want to auto populate any longer? See example below:

When you click on the Country label, you should get the option to "Remove these Recent Entries"....that should clear both entries from that list, so you'd have to retype the whole thing again (correctly) just once to get it re-added to the recent entries list.

So it's purely a "Recent Entry" and not real data stored anywhere like Keywords are, is that statement accurate?

I don't see that ability. Could you share a screenshot of what it would look like?

It's "real" in the sense that it exists in the catalog, the same that the list of all Keywords exists in the catalog. Both can be applied to the metadata of images, and can thus be included within an exported file if required. The main difference is that keywords are permanently visible to the user in the "Keywords List" panel, whereas "Recent Entries" are only exposed to the user when inputting data into a field for which some recent entries are available.
