If I select ‘Subject’ when masking, and the subject is a bird in flight, why does the mask include the sky between feathers? Conversely, if I select ‘Sky’ the same area will be excluded, as shown in the attached.

Is there an adjustment that can be made to include this area automatically?

An easy solution is to select the subject, then subtract the sky. Select subject isn't as intelligent as would be ideal!

Hi Paul, That is what I currently do, but it can be very fiddly and time-consuming. Hoping for a quicker solution.

You can ignore the gaps. My nemesis are tree branches against the sky. Some times a subtraction Mask on color helps.
