If I set Catalog Settings -> File Handling -> Automatically Discard 1:1 Previews to: 'Never', is it possible in the folder LR Catalog Preview. lrdata manual delete 1:1 previews that I don't langer need. So I can for instance keep the 1:1 previews for 90 days?

Yes, you can select the images and then delete the 1:1 previews via the Library - Previews menu.
