I had Lightroom 6.5 from Adobe installed, and just saw 7.0 available in Apple Store, inviting me to update, which I did.

Have I made a big mistake?

Should I uninstall 7.0 from Apple and reinstall 6.5 from Adobe, and wait for Creative Cloud to offer 7.0?

No it’s fine, there’s a gradual rollout. We just can’t say anything about it until tomorrow lunchtime UK time.
Thanks Rikk,

I have deleted the MAS Lightroom 7.0 and reinstalled from Creative Cloud app. All seems good.

I was expecting to be able to delete the MAS version from Creative Cloud App, but not possible, there is no "uninstall" option in the dropdown from the three dots, as there is with Adobe installed apps. So I simply dragged the main app from the apps folder to trash. Then CC app offered to install Lightroom, and put 7.0 on. I did not sign out before doing this and LR 7 from Adobe had all my 80K library sync'd and backed up straightaway. I was expecting a long syncing/verifying stage.
Sounds like it went as expected. When the MAS version releases later you don't need to update to 7.0.1 since you have 7.0 from the CCD.

Yes until yesterday I have always only updated via CC app, and stayed well away from the MAS versions. With nearly anll apps, the MAS version lags behind the manufacturer version, but yesterday was an exception, so when MacUpdater said my LR was out of date I (foolishly) updated it.
