How to get Mosaicked Grayscale B&W from RAW?

Hi, everyone. This might not be related with LR, but I just want to know.
On the ACR RAW Tutorial video, Jeff Schewe shows an image of his, still
mosaicked B&W grayscale just like being captured on the camera sensor.
I want to know how I can get such images. You know what I am talking
about; the dark linear grayscale mosaicked image from RAW. Thanks.
