How do I change how date/time are displayed in LrC? For instance, 12 or 24 hour, MM/DD/YY or DD/MM/YY, etc.

Do you mean in the metadata panel? I can’t check this right now, but I am pretty sure that Lightroom Classic uses the settings of MacOS for that.
