If I take a photo using the iPhone app on new iPhone Max Pro... then import selected images into LR CC on my mobile phone, so I can edit and then sync.

What format / size will the file be that uploads to the cloud.. and then down to my iMac running LR Classic?

The same size / resolution as held on your phone (whatever settings you have that set to)

Same format as shot on the iPhone (so JPG or DNG or HEIC)
