I am trying to find a way to insert eye highlight into one eye using the red eye/pet eye tool. Method is described in book, but no selection available to click on in the pet eye section.

The red eye/pet eye tool is to remove red eyes in humans, or the green eyes in pets, and make these black. I don’t think this tool can add a catchlight in the eye. You can do that by using the Adjustment brush, however. Make the brush tiny, set the feathering quite low, and then click once in the eye to add a small spot. Now you can use the Exposure slider of the brush to make that spot a catchlight.
