EXIF not consistent with display

This may have been addressed in another thread but my searches have not revealed it.
Can anyone tell me why EXIF does not display all shooting information, despite photos coming off the same camera, the same shoot, same day and often same ISO etc. In particular, Exposure Program EXIF. Most of the time that info is missing but if there, it tends to just say "Normal" - which does not say a lot - why not AV, TV, Manual, Program etc.. Canon software used to display what the mode was used and was a great reference. Thanks.

LR does not seem to play well with EXIF "Maker's Notes". These of course vary by manufacturer, and LR doesn't seem to treat them equally or totally effectively.

As to your seeing different results on the same fields from different pictures, is it possible they were of differing format? E.g. some RAW, some JPG?

Well it turns out that RAW off my Canon will include Exposure Program in LR but not in JPG format. I've just taken some on a Nikon D4'X and LR displays Exposure Program in JPG format. Interesting but also blasted annoying. Thank you for the helpful suggestion. Nothing I can do about it suppose - other than buy a new camera which I'm sure Canon would like!

Nikon's like that too -- on the D2'' anyway, focus distance is included in the main EXIF section for JPEGs, but only in MakerNotes in raw files. So LR will display focus distance for JPEGs, but not for raws.

That is where both will display for a RAW off a Canon; Exposure Program and Focal Length. A mystery we cant hope to solve I guess.
