Changing the import defaults when importing into Lightroom (cloudy)

I missed something in my self taught introduction to Lightroom cloudy importing. Specifically, I want to default to a different Camera Profile other than “Camera Standard v2” and automatically enabling lens corrections. I can do this in Lightroom Classic imports, I ought to be able to manage this in Lightroom.
Additionally, is there a way to set metadata values on import? I would like to set the value label (doing so would set the color label when sync’d to Lightroom Classic.) Prefilling titles and Captions would also speed up the workflow.
 
You'd need to create a preset to include the camera profile and Lens Corrections, then use the Settings>Import tab to select the preset as the new Raw Default.

No luck with setting metadata during import, the only thing you can set is Copyright. Can't do Titles and Captions, and there is no "Label" field in Lightroom.

I don’t want to create a preset, just use a different one of the defined profiles already there. Do I have to create a preset just to use one of the existing profiles?

The Label field is part of the EXIF standard fields. I think what you are saying is that Adobe has chosen no mechanism to update this or any other EXIF data on import.
Titles and Caption (and Copyright) can be updated AFTER import but no other EXIF or IPTC fields except Keywords.

You have the same options as with Lightroom Classic.....you can use Adobe Default, or Camera Settings, or a Preset. You cannot select a specific camera profile during import (except via preset or Camera Settings), just as you can't in Classic.

OK, I guess I’ll need to create a camera preset using my preferred camera profile and make it the import default.
