Changing Capture Time

We are beginning the process of digitizing old photos and slides. A current creation date is attached to the file.

In Lightroom we rely primarily on capture time to maintain the organization and flow through the photos folders and collections. There is no date to change after import to LR. Is there someway I can attach a date to the record so that it appears in the logical sequence when I sort by capture time?

On the menu bar, use the Metadata>Edit Capture Time option to assign a capture date/time, which LR will then use to sort on when using the Capture Time sort option. The fact that there's no current capture time doesn't matter, the new one will be applied.
 
"Capture time" is sort of a Lr thing. Before you go far down the road you might wanna figure out which date to store in metadata for the scanned images, and where to store it. Creation date is a poor choice; it's a filesystem date and can be changed by the filesystem. It's not an exif date-time. Some scanning software does a time digitized, which is better, since you can also add a time of the event in a separate place. See here for example: Dates in Lr: examples of differences
