Change 'organize' when importing?

Hi guys,

I'm trying to figure out a way to change the 'organize' options when importing.
This is actually quite close to what I'm looking for:

however, I'm wanting to use underscores instead of hyphens.

Is this possible at all? if so, can anyone point me in the right direction?
