So now I know I can't move images out of folders in Windows, but what do I do with the catalogs I have that are highlighted red because LR can't find the missing files? Can I delete the whole catalog? Thx

Well, you could just delete the catalogs if you don't need the settings stored in them. Or you could relink the files and folders. To do so, right click on the red folder and choose Locate Missing Folder and you'll be all set.
