In the spread view, the arrows jump two pages at a time (1, 2--> 3, 4). Can I move only one at a time (1, 2 --> 2, 3)? Thank you.
 
Spread view shows you real book spreads, so after pages 3+4 you’ll get pages 5+6. Pages 4 and 5 aren’t a spread, but both sides of the same page. It would be very confusing if Lightroom would show you these as a spread too.
