Somehow I have created a 2018 sub folder within my default 2018 folder, now anything I import goes into that folder. Is there anyway I can delete this folder? At the moment I am having to create a new folder in my library, move the images from my “2018/2018/new import” to it and then delete the empty folders but when I import images again the “2018/2018” is still there and the import goes into it again.

Just take s good look at the import dialog. You simply have to uncheck the option to create a subfolder in there.

Or you have (incorrectly) set the existing 2018 folder as the Destination folder, thus Lightroom will always create the specified dated folder structure (which includes a year sub-folder, e.g. 2018) below that 2018 folder. You need to choose the next folder above the 2018 folder as the Destination folder.
