I find it hard to trust clouds these days as they have been very unreliable this year by only returning 5 mm of rain -- that's 60 mm less than average!! Only answer can be someone has hacked the clouds

If you are reasonably happy with jpg files; prepared to lose some photos because exposure/white balance mistakes; than continue using jpg. Some insurance in the way of bracketing would reduce any loses. In some ways more care is needed when using jpg. Not too many years ago; jpg was all we...
This may help Stephanie. As you get more familiar with RAW processing you can make 1/2 dozen or so presets with the basic settings. This will speed up you basic editing time.
General guide for a starting point.
white balance and exposure 00
contrast + 5-10
Shadows + 30
Instead of "Alt"; you can also use the "J" key to turn the on screen clippings on and off.
Generally I just watch the triangles as you mentioned.

you can move the dot along the line and up and down
I never use that way as I find moving the sliders easier
The Lights slider does the most for me -- sort of a mid tone brighter
I also use the Basic tools mostly and tone curves if finer adjustment is required
