You still can revert the exposure setting. Go to the exposure slider, you will see it is at the same valueon the DNG than on the RAW (+2.79 in your example). You can therefore move it back to 0 on the DNG.
This looks like the drive letter problem. Your ED has probably been mounted by Windows to a drive letter different from the previous one.

Underscore is sorted before any letter in alphabetic order. Hence adding a underscore in front of a keyword makes it appear before other keywords at the same level.
How about creting your own RAW profile for your camera ?
The RAW profile is used by LrC to create the image you see in the develop module before any dévelopement settings. Lightroom provide several RAW profiles, some from Adobe, some simulating the profiles of your camera (Portrait, landscape...
To be sure you don't have an other filter active :
- Save your current filter settings as a custom filter.
- Reset all filters by clicking on "None" on the filter,
- be sure to select all your photos
- then try again to filter by the rating
Before resetting préferences, I would have tried the following :
- untick solo mode (to deactivate it)
- restart LrC
- tick solo mode
- enventually restart LrC
It's not sure at all it would have fixed the problem, but it's worth to try because if it had fixed it, it would have also avoided to...
In my opinion, this is not the responsabilty of Lightroom.
Lightroom manages only the edit (metadata and/or develop) made to the images by saving them in its catalog, not the files (it has just a link to them in its catalog). Therefore, it is responsible to verify the integrity of its catalog...

Don't forget the cache file. Increasing it's size, putting it on a very fast non-indexed disk like a SSD and removing it from the antivirus scan might help to improve the LrC performance.
It's location and size can be changed in the Preferences, tab "Performance".
I would suggest to create a preset with just the field Creator and Copyright filled with your Grandson information. The next time your Granson will borrow your camera, you will just have to select all his photos and apply the preset to this selection.
