If you have Photoshop CS3 1'.'.1 or later, you can select the photos in Lightroom, right click/Control-click and choose the command to merge them to panorama using PS. See the Lightroom Help topic Merge photos as panoramas in Photoshop.

Sure. Just select multiple photos in the Grid view and choose Metadata > Edit Capture Time. Choose Adjust to a Specificed Date and Time, and then enter the date/time in Corrected Time. Then click Change All. It's documented at Change the photo capture time.
