What information is available concerning compatibility of Lightroom and Photoshop with the new Apple OS "Mojave"?

Most certainly Adobe will issue a compatibility update when MacOS 10.14.0 is released. This will insure that LR (and PS) can take advantage of all of the performance features of the new OS.

An update outside of the two-month release cadence? Or will Adobe just wait until it's time to release LR 7.6?

I'll get a blog post up today.

No known issues with Lightroom 6, Classic or CC at this stage, although others may crop in real-world use.

Older versions were already reporting issues with High Sierra, so those continue.

There are issues with Photoshop.

Based on past history, it'll be normal release cycle.
