Hi,
I have updated to LRC 11.1, but cannot see the new metadata customize button that should now be available.
Does anyone have any ideas?

The "Customize" button will appear at the bottom of the Metadata panel, but only when the "Default" metadata view is selected at the top of the panel. "Default" is the only customisable metadata view, so it's logical that the button only appears when that mode is selected.
 
Have you selected "Default" as the metadata panel? Customize only works with that one. Working from memory on that, so I'm 90% sure it is called Default
